Shrimp Scampi Pasta

Ingredients
12 ounces First Street linguine salt
1 cup reserved pasta water
4 tablespoons salted butter
2 tablespoons olive oil
1 tablespoon minced garlic
1 pound First Street cooked shrimp
1/2 teaspoon crushed red pepper flakes
1/2 cup dry white wine
1/4 cup fresh lemon juice
1 teaspoon Italian seasoning
1/4 cup Parmesan cheese
1/4 cup fresh parsley
Directions
- Boil pasta in salted water according to package directions. Before draining, reserve ½–1 cup of pasta water. Drain and set aside.
- In a large skillet, heat 2 tbsp butter and 2 tbsp oil over medium heat.
- Add garlic and sauté for about 30 seconds until fragrant (don’t brown it).
- Pour in white wine, lemon juice, and Italian seasoning. Simmer 3–4 minutes, until slightly reduced.
- Remove from heat and swirl in remaining 2 tbsp butter.
- Stir in the cooked shrimp and red pepper flakes. Toss gently and let warm for 1–2 minutes only (just until heated through — don’t overcook).
- Add cooked pasta to the skillet. Toss everything together.
- Add ¼–½ cup reserved pasta water as needed to loosen the sauce and make it glossy.
- Top with Parmesan and fresh parsley.
- Taste and adjust salt if needed.
- Serve with lemon wedges.
